RESTEGAI WITH RICE AND FISH

Ingredients:

For yeast dough:

whole grain wheat flour 600 gr

egg 2 pcs

sugar 25 gr

salt 1 tsp

butter (melt) 80 gr

yeast bag

warm water 300 ml

For filling:

canned fish (tuna, saury or pink salmon) 2 cans

rice (boil in advance) 1 cup

greens to taste (dill, onion, parsley)

onion head

carrots 1 pc

salt, black pepper to taste

vegetable oil for frying

egg for greasing

Cooking process:

1. For the filling: boil the rice, let it cool to room temperature, fry the onion and grated carrots in a pan, combine all the ingredients in a bowl: boiled rice, carrots with onions, herbs, fish, salt and pepper to taste.

2. To knead the dough, you can use a bread maker and the "yeast dough" mode: pour sifted flour, salt, sugar, dry yeast into the bowl of the bread machine, then add eggs, warm water and melted butter, already cooled to room temperature. The whole process of kneading and proofing takes 1, 5 hours.

3. Divide the dough into 15 equal small pieces, leaving some dough for the braids if you decide to decorate your pies with them. Cover the dough with foil so that it does not wind up. Roll out each ball with a rolling pin, put the filling tightly in the middle, press it lightly, fasten the edges like a pie, leaving a hole in the middle. From the remnants of the dough stored for decoration: roll it out, cut the strips with a knife, cut each strip in the middle, and cut the edges with a herringbone, then put the strip on the pies and stick to the pie.

4. Leave the finished pies on a baking sheet for proofing for 20 minutes, then grease each with a slightly beaten egg. Bake in a preheated oven up to 180 ° C for about 20 minutes.
