Cooking process

1. Bring the milk to 90-95 degrees, practically to a boil, pour out the vinegar and start stirring. Continue heating and stirring until the whey becomes clear.

2. Turn off and leave for 20 minutes.

3. Line the colander with gauze, lay out all the curd mass, put pressure and leave to cool completely.

4. Dissolve salt in 1/2 liter of whey, pour the brine into a container, place the cheese there and refrigerate for maturation for at least 8 hours.

5. Ready cheese can be cut into pieces and pickled in spices or olive oil, then used as a snack or in salads, as well as with baked vegetables.
